• 5-6 cups raw beet greens

  • 1/4 cup chopped walnuts/pine nuts/almonds/pistachios

  • 1/3 cup grated parmesan cheese (or nutritional yeast)

  • 2 garlic cloves (or 2 tbsp garlic powder)

  • 1/4 cup lemon juice (or water)

  • 1/2-3/4 cup of olive oil

  • Salt and pepper to taste


  1. Wash, chop up beet greens

  2. Add all ingredients to a food processor or blender and pulse until evenly blended, (should come out like a spread). 

  3. Add to your favorite sandwich, tossed in pasta, as a salad dressing, etc.
