Ingredients

5-6 cups raw beet greens

1/4 cup chopped walnuts/pine nuts/almonds/pistachios

1/3 cup grated parmesan cheese (or nutritional yeast)

2 garlic cloves (or 2 tbsp garlic powder)

1/4 cup lemon juice (or water)

1/2-3/4 cup of olive oil
-
Salt and pepper to taste
Directions

Wash, chop up beet greens
-
Add all ingredients to a food processor or blender and pulse until evenly blended, (should come out like a spread).
-
Add to your favorite sandwich, tossed in pasta, as a salad dressing, etc.
