Ingredients

  • Canned Beans: garbanzo, black beans, white beans, pinto beans, or other

  • Vegetables: such as onions, carrots, greens, cabbage, potatoes

  • Spices: a couple options to try

    • curr​y powder, ginger, garlic powder, salt, and pepper

    • oregano, basil, thyme, parsley, garlic powder, paprika, salt and pepper

  • Liquid: Broth is always my go-to. If you don't have any, no problem, you can use water! Just make sure to add more spices as the water can often dilute the flavor. *Want to make the soup more creamy? Add in 1/4 cup of milk and mix it in, add more as you please to get the consistency you like. ​

Directions

  1. On medium-low heat, add some cooking oil to the bottom of your pan. Dice up the garlic (if you are using fresh garlic), and onions and add to the oil. Make sure there is enough oil to cover all the pieces of onion, usually you need 2-3 spoonfuls. Next, add spices.

  2. After the onion starts to become translucent, (~3 mins), add in 4-6 cups of liquid and turn the heat up to medium-high. 

  3. Once a slight boil occurs, add in the chopped vegetables and reduce the heat to a simmer. 

  4. Allow the vegetables to steam and become tender. Once tender, rinse the beans and add them into the pot. If you want the soup to be creamy, add the milk now too. 

  5. Give the soup about 20-30 mins to simmer (lid on) so the flavors can come out.
