Ingredients

  • A bushel of carrots: peeled and sliced into oval-shaped pieces, each about 1/2 inch thick

  • Olive oil

  • Salt and pepper to taste

  • Spices

You can use a variety of spices to achieve a good savory taste, some of my favorites are highlighted below: garlic powder, paprika, parsley, thyme

Directions

  1. Preheat oven to 425oF 

  2. Wash, peel, slice carrots into oval-shaped pieces, each about 1/2 inch thick.

  3. Place carrot slices in a big bowl, adding in enough olive oil (or your oil of choice) to evenly coat them. 

  4. Add your spices. This part is dependent on how many carrots you have. I suggest putting in 1-2 tsp of each spice into the bowl, tossing them around with the oiled carrots, and adding more as you go along. Each carrot slice should have a light dusting of spices. 

  5. Pour the carrots onto a sheet pan bake for 10 mins. Take the pan out of the oven, flip the carrots over, and bake for an additional 10-15 mins until browned on the outside and tender on the inside.*

*This can also be done by sautéing the stove-top, using a medium-large pan with medium heat. You will need to keep a closer eye on the carrots, as they will need to be tossed every 3-5 mins to ensure even cooking, for approximately 20 mins in total. To test when they are done, they should be browned on the outside. Take a fork and stab one through, if it is still hard, then they need to sauté for longer. If the fork easily slides through the carrot, you're done! Time to eat! 

Savory Roasted Carrots

Carrots are delicious raw or cooked! To eat raw, simply wash, peel, and chop up into "sticks." These can be dipped in hummus for a quick, healthy snack. For cooked carrots, see the recipe below:
